Pasta with Peas and Prosciutto

Ingredients:

1 lb pasta (any kind)
1/2 small onion, chopped finely
1 cup frozen peas
Thinly sliced (and chopped up) or small cubed prosciutto
1/4-1/2 cup heavy whipping cream
1/2 cup freshly grated Parmesan cheese
Salt and pepper
Butter





Directions:

Boil salted water and cook pasta according to package instructions. Add in frozen peas to the cooking pasta when there is about 3-4 minutes left of cook time. Drain pasta and peas, remembering to reserve about 1/4 cup of pasta water before draining.

In a large saute pan melt about 2 tbsp of butter. Add chopped onions and saute until they are soft. Add prosciutto and saute for another few minutes. Add in cream, season with salt and pepper and simmer for 5-10 minutes. Ladle some of the starchy pasta water into the sauce a little bit at a time.

Add pasta and peas to the warm sauce and combine. Remove from heat and stir in parmesan cheese. Serve in bowls with additional fresh cracked pepper and parmesan.
