Preheat oven to 400 degrees.
Rub beets generously with olive oil and salt. Wrap beets individually in foil and place on a pan. Place in oven and cook for 35-55 minutes. Check frequently for done-ness. Beets are done when easily pierced with a fork (similar to potatoes).
To remove skin, soak beets in water (to quickly bring the temperature down) and use a paper towel to rub off skin or use a knife to cut off skin.
