INGREDIENTS:
1 cup quinoa1 tablespoon olive oil
1 pound cremini mushrooms, thinly sliced
3-4 cloves garlic, minced
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
Freshly grated Parmesan
INSTRUCTIONS:
Cook quinoa according to package instructions; set aside.Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic and thyme, and cook, stirring occasionally, until tender, about 5 minutes; season generously with salt and pepper.
Stir in quinoa until well combined. Stir in Parmesan. Grate additional Parmesan on individual servings when plating.
