Parmesan Roasted Broccoli and Onions

Ingredients:

1 bunch broccoli, cut into florets
1 small red onion (or 1/2 of a large one), cut into wedges
2 tablespoons olive oil
1/2 cup grated Parmesan
kosher salt and black pepper




Directions:

Heat oven to 425° F. Line a rimmed baking sheet with foil. On the sheet toss the broccoli and onion with the oil and Parmesan and season with ½ teaspoon each salt and pepper. Roast, tossing once, until tender, about 20 minutes.
