Ingredients:
1/2 tsp finely chopped shallot1 tsp. Dijon mustard
1 tsp. honey
2 tsp. fresh lemon juice
1/4 tsp each salt and pepper
1 tsp. olive oil
Parmesan cheese
Approx. 4 cups of arugula
Directions:
Combine shallot, Dijon mustard, honey, lemon juice and salt and pepper in a small bowl. Add the olive oil and whisk vigorously.
Pour over 4 cups arugula and toss. Serve with grated or shaved parmesan.
