Ingredients:
3 shallots, thinly sliced
2 teaspoon(s) chopped garlic
1 (up to 2) red or green chiles, sliced
2 tablespoon(s) fish sauce
1 tablespoon(s) soy sauce
1 tablespoon(s) lime juice
2 teaspoon(s) brown sugar
1/2 cup(s) basil leaves, preferably Thai
2 tablespoon(s) peanut oil
1 pound(s) large shrimp, peeled
Prepared jasmine rice, optional
Directions:
In a small bowl, combine shallots, garlic, and chile(s).In another bowl, combine fish sauce, soy sauce, lime juice, brown sugar, and basil leaves. Heat peanut oil in a large wok or skillet over medium-high heat; add shallot mixture and cook until garlic is lightly golden, 1 minute.
Add peeled shrimp with tails; stir-fry 1 minute. Add soy sauce mixture and stir-fry until shrimp are just cooked through, 2 to 3 minutes. Can serve over jasmine rice.
