Ingredients:
1/2-3/4 of a small jar of sundried tomatoes in oil (chopped or julienned)1/2 lb of Italian sausage (raw) or about 2-3 links of cooked pork or chicken sausage
1/2 onion, chopped
2 garlic cloves, minced
Red wine, two large splashes
Balsamic Vinegar, a small splash
1-2 tbsp Tomato paste
12-16 oz any kind of pasta with bite - penne, fusilli, bowtie, etc.
Red pepper flakes
Parmesan cheese
Instructions:
Grill the sausage until done and coarsely slice it, if raw. If already cooked, just chop it up into small pieces - half moons or quartered rounds.Separately, saute the onions in olive oil until cooked through, then add garlic until fragrant. Add in cooked sausage and sundried tomatoes, combine. Add tomato paste and ensure everything gets a nice coat. Then add in the red wine and balsamic vinegar (a little at a time to taste, it can be overpowering if too much). Stir together and simmer on low for about 5-10 minutes, or until the pasta is cooked.
Add a ladle of starchy pasta water right before draining the pasta. Stir in cooked pasta.
Serve with red pepper flakes and generous parmesan cheese.
