Ingredients:
Salmon filet(s) - 1.5-2 lb
Juice of 1 lemon
~2 garlic cloves, minced
Oregano flakes, few shakes
Lemon pepper, few shakes (or regular pepper)
Directions:
Preheat oven to 375. Place foil (enough to cover salmon completely on top) on a rimmed baking pan. Brush middle of foil (part that is on the pan) lightly with olive oil.
Combine lemon juice, spices and garlic in a small bowl.
Place salmon on the foil and lightly drizzle top with olive oil. Pour juice with garlic over the top. Wrap up the sides of the foil to create a closed package. Place in oven for 15-25 minutes depending on size and how well-done you want your salmon. (20 min for 2 lbs usually results in slightly/nicely under done in thickest section. 15 min should be fine for 1.5 inch thickness, any thicker, add more time)
Optional: Broil for ~2-3 min after with the foil opened up to crisp the top up a bit. Serve with melted butter.
